Injection systems get away with not needing very large injectors because as you said, the pressure dictates how much fuel can come out of an injector.

(Some people push pressure to get more flow)

Pressure doesn't simply dictate how much fuel can flow, but how quickly larger amounts of fuel can be tapped.
This becomes especially important during boosting on TT's because the demand is so high and sudden.

Keeping pressure low when demand is low helps ensure a better idle and efficiency.
